About how many hours do you spend on shooting fireworks on any given day?

There are many questions to this: What kind of show are you shooting, budget, crew, weather etc....

depends on the show. Large shows could be 10+ hours of set up for a 20-30min show.

Depends on the given day. Most days zero. I average about three 20 minute shows a year so I guess that averages out to about 17 seconds per day! Set up time for a 20 minute show is anywhere from 4 hours to 10 hours depending on numerous factors.
